These are absolutely delicious! Instead of spending four or five dollars at the store for disgusting, soggy, gross, mozzarella sticks you can make these in about half an hour from scratch for just pennies!
Ingredients:
16 string cheese sticks, removed from wrapper
1/2 cup all purpose flour
2 whole eggs
3 tablespoons milk
1 tablespoon dried parsley flakes
Canola Oil, for frying. You can use vegetable oil, if in a bind.
Marinara sauce. (In a few weeks I should be posting a recipe for a home-made version, but for now store bought will do.)
2 cups panko bread crumbs[/list]
Preparation
Cut string cheese in half, for a total of 32 pieces. In a separate bowl whisk the eggs and the milk. In a second bowl combine the panko crumbs and parsley flakes. To assemble roll the cheese sticks in flour, then dunk in the egg/milk mixture. Use your hands to cover the mozzarella sticks in the panko crumbs. Gently remove and place on a cookie sheet. Once all your cheese sticks are assembled place in freezer for 20-30 minutes. This step ensures that the sticks are frozen and won't melt into one big hot, gooey mess in your frying pan.To begin the cooking process heat 1 1/2 inches of canola oil in a large skillet over medium heat. Gently place the mozzarella sticks into the oil(and please be careful as this will probably make it splatter all over the place and burn you multiple times.) Do this 8 at a time to ensure that your pan isn't over crowded and the heat get distributed evenly. Watch them closely and turn them over so brown evenly. It takes about 2 minutes for them to quickly so make sure you have a draining device ready. Do not let the cheese bubble out, because, as said before it will create one big, hot, gooey mess. Serve immediately with warm marinara sauce.
